Sugar-free Cake Recipes

Sugar-free cakes, as the name suggests, are meant for those people who have opted for a sugar-free diet. Here are some simple recipes that are low in calories and yummy as well.
Celebrations are incomplete without a savory and delicious cake. Cakes are the most popular desserts of choice for meals at parties, weddings, birthdays and anniversaries. Whether it's a cheesecake, chocolate cake or butter cake, it is loved by people of all ages, and especially by the kids.
But with the ever-increasing risks of sugar intake, like diabetes and obesity, people have reduced the consumption of sugar and started using sugar-free supplements in their diet.
Sugar-free supplements come in three types: table sugar made from fruit concentrates or puree, powdered sugar made from aspartame and sucrose, which is the latest version in sugar-free supplements with minimum calories.

Applesauce Raisin Spice Cake

  • 2 cups, flour
  • ½ cup, raisins
  • 1 cup, unsweetened applesauce
  • 2 tablespoons, liquid sweetener
  • 1 teaspoon, baking soda
  • 2 eggs
  • ½ cup, cooking oil
  • ½ teaspoon, nutmeg
  • 1 teaspoon, vanilla
  • 1½ teaspoons, cinnamon
  • Fruit cocktail, drained
  • ½ cup, water
Cook the raisins in water and allow it to cool. Add applesauce, eggs, liquid sweetener, and oil; mix well. Sift together flour, baking soda, nutmeg, and cinnamon and stir the mixture. Finally, add vanilla and bake in a 4x4x8'' loaf pan at 350 °F for 45 minutes or until golden brown.

Date Coffee Cake

  • 3 cups, flour
  • ½ cup, mashed bananas
  • 3 eggs
  • 1½ cups, chopped dates
  • 2 teaspoons, baking powder
  • 1 teaspoon, baking soda
  • ½ cup, butter (softened)
  • 1½ cups, water
  • 1 teaspoon, vanilla
  • ⅓ cup, walnuts
  • ⅓ cup, chopped dates
  • ⅓ cup, coconut
Beat the butter and mashed bananas together, until the mixture becomes creamy. Add eggs, vanilla, and water. Add the flour, soda, and baking powder; beat well. Stir in the dates and spread the batter evenly in a greased 9x13 inch pan.
Combine the toppings and sprinkle over the batter. Bake at 350 °F for 20-25 minutes or insert a knife which should come out clean. Allow it to cool and serve.

Vegan Carrot Cake

  • ½ cup, carrot (grated)
  • 2 cups, whole wheat flour
  • ⅓ cup, frozen orange juice concentrate (thawed)
  • 1¼ cups, water
  • 1 teaspoon, baking powder
  • 1 teaspoon, cinnamon
  • ½ cup, chopped walnuts
  • 1 cup, raisins
  • 1 teaspoon, baking soda
  • ¼ teaspoon, salt
  • 1¼ cups, dates (chopped)
  • 1 teaspoon, ground ginger
  • ½ teaspoon, ground nutmeg
  • ½ teaspoon, ground cloves
In a bowl, mix the flour, baking soda, baking powder, and salt and set aside. Take a saucepan and combine the water, raisins, dates, ginger, cloves, nutmeg, and cinnamon. Bring to a boil and gently simmer for 5-7 minutes on a low-flame. Transfer the shredded carrots in a bowl and pour the hot water mixture over them, and let it cool completely.
Now, add the orange juice concentrate and walnuts to the mixture. Combine the dry ingredients with the wet ingredients and stir well. Pour the batter into a lightly oiled cake pan and bake at 375 °F for 40-45 minutes or until a toothpick inserted in the cake comes out clean. Frost with a sugar-free vegan frosting and serve.
