Non-dairy Yogurt: A Healthy Alternative for Vegans

Most vegans don't prefer to consume any dairy product, including yogurt. Non-dairy yogurt can be a great option to ingest its nutrition, without actually consuming it.
Non-dairy yogurt, is basically the product obtained by fermenting soy milk with the bacteria Lactobacillus bulgaricus and Streptococcus thermophilus, which are used for curdling. Therefore, this is also known as soy yogurt and the process is the same as fermentation of cow's milk with these bacteria.
It may have artificial sweeteners like glucose, fructose or sugar, to add taste to the product. Nowadays, a number of people, irrespective of being non vegan, have taken up eating this instead of the dairy ones, because of its nutritional aspects.
Thus, there are many brands that have benefited due to the launch of this healthy and nutritious varietal. It is also very simple to prepare, and can be used for various food recipes, just like the dairy ones. So, if you wish to try making it at home, here are a few easy recipes.

Making it at home

Preparing this product at home is very easy. All you have to do is add some of the earlier left over yogurt to, boiled and then cooled milk and let it rest overnight. But for people who are lactose intolerant or are vegans, the cow's milk does not provide much nutrition. This is when the soy milk varietal comes in the picture.
Follow the same process, stated earlier, for fermenting the soy milk. You will have fresh nutritious yogurt ready to be eaten. For this fermentation process in soy milk you will need a starter, including ingredients like fermenting bacteria (probiotics) and sweeteners. If you're allergic to soy products, the substitute can be made using rice or almond milk.

Soy Milk

Ingredients:
  • Yogurt starter, 1 bottle
  • Soy milk, 3 cups
  • Gelatin or pectin
  • Sugar (optional)
Directions:

Since this is a curdling (fermentation) process, you need to use cleaned, washed, and dried utensils for it. First of all, boil the soy milk very well so that all the contamination of "bad bacteria" are eliminated. Then add the gelatin to this milk, to get the consistency like regular yogurt, otherwise it will become thick.
Now, add the starter so that the bacteria and artificial sweeteners get infused. Stir the milk slowly, so that all the ingredients are mixed well and uniformly. Let this milk stand at room temperature for more than 24 hours.

Flavored

Ingredients:
  • Soy Milk Yogurt, 1 package
  • Raspberries, 2 cups
  • Vanilla, 1 tsp.
  • Maple Syrup, 3 tbsp.
  • Sugar (by choice)
Directions:

It is always a more palatable option to eat flavored yogurt, since it has a delicious taste and is healthy. In a clean container, add the yogurt, some sugar, and vanilla. Blend it well, so that the flavors are mixed well with each other. Now, squash the raspberries with your hand and make a thick juice from them.
Add them to the mixture and whisk all the ingredients, so that the flavor of raspberries gets fully incorporated. Refrigerate it overnight and serve it with some fresh raspberries. You can add any other fruit and serve it as a chilled afternoon snack.
