  • Egg whites, 2
  • Pumpkin pie spice, ½ teaspoon
  • Baking soda, ½ teaspoon
  • Baking powder, ¼ teaspoon
  • Vanilla essence, ¼ teaspoon
Procedure:
1. Take a large bowl and add the egg whites in it, then add oatmeal and chai in it and mix well.
2. Now, add the rest of the ingredients one at a time and mix them well. Form a smooth batter without clots.
3. Preheat the oven at 350 degree F.
4. Now, take a muffin pan and spray it with butter and pour the batter on it.
5. Bake the muffins for about 12 to 15 minutes and your Maple Chai muffins are ready!
6. You can also sprinkle cinnamon on top of the batter prior to baking them.

Medifast Oatmeal Bread

Ingredients:
  • Medifast oatmeal, 1 pack
  • Medifast eggs, 1 pack
  • Water, 4 tablespoons
  • Flax meal, 1 tablespoon (ground)
  • Baking powder, ½ teaspoon
  • Lemon/vanilla extract, ¼ teaspoon
  • Splenda, 1⁄8 teaspoon
  • Apple pie spice, to taste
Procedure:
1. Take all mentioned ingredients in a bowl and mix them well. Then add water and make a batter.
2. Now, form two round shapes of this batter on the cookie sheet and flatten them.
3. Bake at 375 degree F, for around 10 minutes. This is one of the best oatmeal bread recipes that you can try at home.
4. You can now consume it as it is, or by spreading some low fat cream cheese on top of it!

Medifast Mediterranean Grilled Chicken

Ingredients:
  • Chicken breast, 12 oz (boneless, skinless)
  • Zucchini, ¾ cup
  • Summer squash, ¾ cup
  • White cider vinegar, 3 tablespoons
  • Olive oil, 2 tablespoons
  • Sun dried tomatoes, 1 tablespoon (chopped)
  • Garlic, 1 clove
  • Italian seasoning, 1 teaspoon
  • Lemon zest, ½ teaspoon
  • Black pepper, ¼ teaspoon (ground)
  • Salt to taste
Procedure:
1. Take a bowl and make a marinade for chicken by mixing the herbs, Italian seasoning, olive oil, garlic, tomatoes, zest of lemon, and black pepper.
2. Now, fill this marinade in a zip-lock plastic bag and then place the chicken breast in it. Now, seal the zip and refrigerate it for half an hour.
3. Remove the chicken from the marinade and grill it for about 5 to 7 minutes on each side.
4. Now, grill summer squash and zucchini as well.
5. Sprinkle salt and pepper on it and grill until done!

Medifast Lean and Green Tuna Salad

Ingredients:
  • Tuna, 1 can (drained)
  • Mixed sprouts and salad greens like romaine, 2 cups
  • Dill pickle, ½ cup (diced)
  • Bell peppers
  • Celery
  • Mayonnaise, 2 tablespoons (low fat)
Procedure:
1. First, drain the tuna and place it in a bowl.
2. Dice the bell pepper and celery as well.
3. Now, mix all the ingredients in the bowl and your Lean and Green tuna salad is ready!
