Crock Pot Chili with Turkey

Ingredients
  • 1 tablespoon olive oil
  • 1 large can tomato sauce
  • 1 large can tomatoes (diced)
  • 2 packages chili seasoning
  • 1 can dark red kidney beans
  • 1 can light red kidney beans
  • 1 medium-sized onion (diced)
  • ½ cup brown sugar
  • 1 can chickpeas
  • 2 pounds ground turkey
Procedure
In a nonstick frypan, fry the ground turkey until it releases fat. Drain the fat, blot the meat with some paper towels, and rinse it with hot water. In another frypan, sauté the onion in the olive oil.
Add the turkey to it, and let it cook for a few minutes. Combine the tomato sauce, tomatoes, chili seasoning, brown sugar, kidney beans, and chickpeas in the Crock Pot. Add the onion and turkey mixture to it, and stir well. Cover the Crock Pot, and let the mixture cook over high heat for 2-3 hours.

Spicy Lemon Chicken

Ingredients
  • ¼ cup lemon juice
  • 1 medium-sized onion (chopped)
  • 1 tablespoon vegetable oil
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • ½ teaspoon paprika
  • ½ teaspoon ground ginger
  • 4 boneless chicken breast (halved)
  • ¼ teaspoon pepper
  • Salt to taste
  • ⅓ cup water
  • 4½ teaspoons cornstarch
  • Noodles or rice (cooked)
Procedure
Grease the crock pot with a butter-flavored cooking spray. Add the onion, water, oil, lemon juice, and chicken to it along with the garlic powder, chili powder, paprika, ginger, pepper, ans salt. Stir the mixture to coat the chicken evenly, and let it cook for about 4-5 hours.
The temperature of the chicken must be checked with a thermometer and should be 170 °F. Once done, combine the cornstarch with 1 tablespoon of the chicken broth in the cooking pan; you can use more broth to get the desired consistency. Cook this mixture until it turns thick. Combine it with the chicken and serve it with the noodles.

Vegetable and Cheese Soup

Ingredients
  • 4 cups thawed blend of frozen carrot, broccoli, and cauliflower
  • ½ cup onion (finely chopped)
  • 2 ounce paprika
  • 1 can cream of mushroom soup
  • 1½ cups low-fat cheese
Procedure
Grease the crock pot with a butter-flavored cooking spray. Add the thawed vegetables, onion, paprika, and cheese to it and let the mixture cook for about 6 hours. Serve it with rice.
