How to Make Cinnamon Extract

Cinnamon is a spice known for its sweet, pungent taste and spicy flavor. This spice has a history of being 4000 years old and popular for its medicinal properties. An extract prepared from this cinnamon can improve FBG (Fasting Blood Glucose) level in those suffering from type 2 diabetes.

Set a timer!

Place a notepaper with the 'start date' on the bottle of extract. After the stipulated time of 8 weeks, you can replace it with a sticker label which says Cinnamon Extract.
There are two types of cinnamon―the true type, Ceylon cinnamon, and a darker version, the Cassia cinnamon. The most commonly found cinnamon, Cassia, if taken in excess, can cause liver damage. While the expensive type, Ceylon, has lesser coumarin content which helps in lowering blood sugar levels.
Adding a cinnamon twist to your recipe will definitely enhance its taste. You could use cinnamon sticks, powdered cinnamon, its oil, or its extract. For cooking purposes, cinnamon extract is an easier and better ingredient to use than cinnamon oil.
It is important to understand that these two are different from each other before substituting them in any recipe.

Cinnamon extract is prepared by dissolving cinnamon in an alcohol solution, thus, the final extract is in concentrated form.
So wear your aprons and get ready to make it at home. You can splash a bit of it on applesauce or baked items and enjoy the lip-smacking cinnamon taste!

Things You'll Need

➺ Mason jars or bottles
➺ Hard alcohol (vodka, light rum, etc.), 3 oz.
➺ Cinnamon sticks, 3 - 4
➺ Strainer (if you're using crushed cinnamon instead of whole sticks)


For 1 cup extract, use 1 oz. of alcohol.
  • Fetch a clean and dry mason jar. Add 3 - 4 whole cinnamon sticks to it. You can break the sticks, or use crushed cinnamon (½ cup) instead.
  • Pour 3 oz. of vodka in it. All the sticks should be immersed fully in vodka. Cover it with a tight lid to retain its flavor.
  • Place the jar in a dark and cool place.
  • Shake the jar every alternate day for about 8 - 9 weeks for the ingredients to mix well. Don't open its lid.
  • After the designated time, remove the cinnamon sticks, and transfer the extract to a dark glass jar. You can use a strainer to filter the extract.
Remember, older the extract better it tastes.

Cinnamon Extract Without Alcohol

➺ If you want cinnamon extract devoid of alcohol, you can use cinnamon oil as a replacement.
➺ Generally, one part cinnamon oil substitutes for four parts cinnamon extract, if you wish to make the extract with cinnamon oil as an ingredient.
So, stock this extract in your shelf and savor your taste buds. A little cinnamon does no harm but helps in the long run!
