Healthy Ground Beef Recipes

Whether you call it ground beef or minced meat, it can be made into a tasty dinner. Apart from its versatility, this affordable meat is a healthy choice for non-vegetarians. Lean ground beef contains a high percentage of proteins, vitamin B, zinc, and iron. Most of us know how to cook it in various ways. For those who don't, here are a few recipes to try.

Healthy Ground Beef with Vegetables

Ingredients:
  • 2 pounds, ground beef
  • 1½ cups, onion (thinly sliced)
  • 1 garlic clove (minced)
  • 1 cup, carrot (finely chopped)
  • 1½ cups, yellow bell pepper (sliced)
  • 1½ cups, red bell pepper (sliced)
  • 1 can, stewed tomatoes
  • 1 can, tomato sauce
  • 2 bay leaves
  • 2 tablespoons, balsamic vinegar
  • 1 tablespoon, olive oil
  • ½ cup, dry white wine (Optional)
  • 1½ teaspoons, salt
  • 1/8 teaspoon, black pepper
Directions for Preparation:

Preheat a nonstick pan over medium high heat. Add the beef and cook it till it turns brown. Drain the oil and transfer the meat into a platter. Return the pan to the heat and add the olive oil. Fry the onion and garlic for 1-2 minutes. Stir in the carrot, yellow bell pepper, and red bell pepper.
Cook for 3 minutes and add the cooked beef. Then, add all the remaining ingredients - tomato sauce, vinegar, white wine, salt, and pepper. As it reaches boiling temperature, reduce the heat and cook for 15 minutes. Discard the bay leaves and serve hot.

Healthy Ground Beef and Macaroni

Ingredients:
  • 1 pound, extra-lean (93%) ground beef
  • 2 cups, macaroni noodles (cooked)
  • 1 large onion (chopped)
  • 1 can, tomatoes (crushed)
  • 1 cup, low-fat cheese (finely grated)
  • 2 tablespoons, fresh basil (chopped)
  • 1 teaspoon, kosher salt
  • Freshly ground black pepper to taste
Directions for Preparation:

Preheat a skillet, and brown the onion and beef. Stir in the tomato sauce and cook for another 10-15 minutes over medium low heat setting. Season with salt to taste. Stir well and taste, if the seasonings are perfect for your taste. Remove from heat, cover the lid and keep aside.
Cook the macaroni in a pot, as per the directions mentioned in the package. Transfer the cooked macaroni into serving bowls. Then, top it with the meat mixture, grated cheese, and pepper. While serving, garnish the dish with basil.

Healthy Ground Beef with Beans

Ingredients:
  • 1 pound, lean cut ground beef
  • ½ cup, yellow onion, diced
  • 2 cups, red kidney beans (soaked and drained)
  • 1 cup, frozen corn (thawed)
  • 1 can, tomato sauce
  • 1 can, diced tomatoes
  • 1 cup, Tabasco sauce
  • 1 tablespoon, extra-virgin olive oil
  • 2 teaspoons, chili powder
  • 1 teaspoon, ground red pepper
  • Salt to taste
Directions for Preparation:

In a skillet, add the ground beef and mix it with extra-virgin olive oil. Put it over a medium high heat and cook until the meat is no longer pink. If desired, drain the excess oil from the cooked meat and transfer it into a large saucepan. To this, stir in the kidney beans, corn, tomato sauce, tomatoes, and onion.
Season the meat mixture with Tabasco sauce, red pepper, and chili powder. Bring this concoction to a boiling temperature over high heat and cook for 15-17 minutes. Cover the lid and simmer for another 10-12 minutes. Remove it from heat and allow it to cool down. This tastes best with cornbread slices.
