Fruit Salad with Orange Juice
What You'll Need
1 cup of freshly squeezed orange juice
1 medium-sized apple (with skin, diced)
½ cup of raspberries
½ cup of sliced almond (soften these overnight and then cup them up)
½ cup of pomegranate arils
½ of cherries (de-seeded)
1 teaspoon of honey
Method of Preparation After you squeeze out the orange juice from an orange and carefully separate the seeds, stir in a teaspoon of honey and make sure it mixes up well with the juice. Keep this aside, and then use a big bowl to bring together your fruits and sliced almond nuts.
Using salad tossers, give your ingredients a good mix and then add into this your orange juice and honey concoction, before giving it a good toss again. Keep this in the refrigerator for 15 minutes, and then eat it while its nice and cool. You can garnish it with mint leaves for a finishing, refreshing touch.
Garlic Mushrooms with Tofu and Peanut Butter Dip
What You'll Need
1 cup of mushrooms (medium-sized, sliced)
3 cloves of garlic (crushed)
4 cubes of tofu
2 tablespoons of peanut butter with nut bits in it
Salt to taste
½ a teaspoon of paprika
½ cup of green bell peppers (finely sliced)
½ cup of broccoli
½ cup of spring onion (chopped)
1 small piece of ginger (finely sliced)
1 tablespoon of lemon juice
1 tablespoon of olive oil
1 teaspoon of cilantro
Method of Preparation Take a non stick pan, and drop into this your garlic once the oil heats up. You'll know this from the little ripples that form - turn it down to low once that happens and drop in your ingredients. After the garlic goes in, immediately add to this your mushrooms before the garlic browns and turns bitter; sauté this continuously.
Place into this your tofu and let it fry evenly on both sides until they turn crispy golden brown in color. Add in your paprika and just a pinch of salt, with the julienned bell pepper and broccoli. Sauté these for another 2 minutes and then turn the gas off.
Plate the ingredients of the pan and shower with chopped spring onions and move on to your peanut butter dip.
Mix together your peanut butter, lemon juice, finely sliced cilantro and a teaspoon of olive oil. Crush the ginger before adding it to the sauce, and then mix it until all ingredients are fused into one. You can scoop up your mushrooms with lettuce leaves and add a little of the di into it, before biting down into that crunchy goodness.
It can serve as a veggie crepe, to make things more nutritious during breakfast time. Top off the tofu with peanut butter and a little of the veggies, before sinking your teeth in. You can more garlic or paprika for more flavor if you'd like.
Pineapple and Lychee Smoothie
What You'll Need
3 pineapple discs
1 cup of lychees
4 crushed ice cubes
2 teaspoons of mint leaves
½ a banana
Method of Preparation Take a food processor and dump into this your pineapple and lychees, along with your ice, mint leaves and banana. Blitz this until your smoothie takes on a creamy, yellow and pink tinged look, and then pour this into a glass topped-off with a sprig of mint. Yum.
