  • 2 pounds sugar
  • 1 pint water
Directions for Preparation

So, you can prepare this cherry juice concentrate in stock. In a large saucepan, add pitted cherries and 2 pounds sugar.
Cover with a lid and leave it for some time, say 2 hours. To this, add water and warm it on medium low heat. Bring it to a rolling boil, and then simmer for 15-20 minutes.
By this time, the nutrients from the sweetened cherries are infused into the cooking water. Strain the liquid in another saucepan and discard the cooked cherries. Cook this liquid in low heat till it thickens to about half the amount. Your fresh cherry syrup is done when its consistency is similar to that of other fruit syrups. Remove from heat and allow it to cool down completely. Transfer syrup in a glass jar, seal it and store in the refrigerator.
At the time of serving black cherry juice, you can use two spoonfuls of this syrup in a glass of water. Many people prefer adding crushed vitamin C tablet in cherry juice recipe for increasing shelf life of freshly prepared juice.
Besides juicing, you can use fresh cherries in salads, smoothies, salsa, ice creams, cocktails and also, in baking sweet goodies for desserts.
